Zucchini Noodle Recipe with Caramelized Onions and Crushed Roasted Walnuts

This zucchini noodle recipe with caramelized onions and crushed roasted walnuts is an easy healthy dinner to put together. If you cook the caramelized onions in advance, dinner is ready in less than 10 minutes!

How to Caramelize Onions

While caramelizing onions might seem like a fancy thing to do, it really couldn’t be any easier. All you need is a little bit of time. In this recipe, I use 2 medium-large onions, and after peeling them, I cut them in half lengthwise. Then I cut each half into thirds, and slice crosswise into 1/4″ thick slices. This way I have perfectly sized onions that don’t cook to slow or fast.

Low and Slow

Start cooking onions over a medium heat for about 10 minutes, then once they start to color, turn them down to low heat and cover. It can take anywhere from 30-50 minutes to fully caramelize onions, but the wait is well worth it! It’s a relatively hands-off task, but you do want to keep your eyes on them an stir occasionally, so that they don’t burn!

The End Result

Caramelized onions are done when they are in fact, just that, caramel colored like in the photo above. You can take them even further than I did to a deeper brown color, but it had been about 45 minutes, and I was ready to move on!

How to Meal Plan

This zucchini noodle recipe can also be made with regular pasta as well. It can be a meal within itself, but if a bit more heft is required, try making this cast-iron steak with mustard and smoked paprika alongside. For a fully vegetarian meal, pair with arugula and apple salad.

Ingredients

  • 1 1/2 pounds onions
  • 1 1/2 Tablespoons + 2 teaspoons extra virgin olive oil, divided
  • 1-2 Tablespoons sherry vinegar
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • pinch ground cloves
  • 2 large sprigs fresh rosemary
  • 2/3 cup walnuts
  • fine sea salt
  • 12 oz. zucchini noodles
  • 2 oz. grated Parmesan cheese or Pecorino Romano
  • 2 teaspoons extra virgin olive oil

Instructions

Caramelized Onions

  • Cut onions in half lengthwise and peel. Cut each half into thirds, then slice each piece crosswise about 1/4 inch thick.
  • Heat 1 1/2 Tablespoons olive oil in a 10-inch skillet, add the onions and cook over medium heat, stirring occasionally. When they begin to color, turn heat to medium low, cover and cook for 30-40 minutes, stirring occasionally. After 20 minutes, remove the lid and keep an eye on them to make sure they don't burn.
  • Meanwhile, prepare the remaining ingredients. Mince rosemary leaves and set aside. Toast walnuts at 350 degrees F for 8-10 minutes, let cool, and finely chop. 
  • When the onions are caramel colored, raise the heat, add the vinegar, stirring constantly. Season with 3/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon ground cloves, and minced rosemary. Remove onions from the pan.

Zucchini Noodles

  • In a large saute pan (you can use the same pan you did for the caramelized onion), add 2 teaspoons olive oil. Add zucchini noodles and cook for 3-6 minutes, until bright green and still a little crisp. Add most of the caramelized onions back to the pan, along with the toasted walnuts. Toss together and immediately remove to a serving plate. 
  • To serve, top with remaining caramelized onions, and sprinkle with cheese.
