Preheat oven to 400 degrees F. Cut eggplant into 1-inch slices, cut on the diagonal. Place on a baking sheet.
In a mortar and pestle (or in a small bowl with the back of a spoon), mash together olive oil, za'atar, and garlic clove to make a paste. Rub on eggplant slices. Place in oven and cook for 20 minutes.
Meanwhile, make tahini sauce, and get your other ingredients ready. Cut cherry tomatoes in half, thinly slice cucumber and red onion, crumble feta cheese, and cut pita breads in half.
To assemble wraps, lay cooked eggplant slices inside pita bread. Top with other ingredients and drizzle with tahini sauce. Enjoy!
