  • 1 large eggplant
  • 1/4 cup extra virgin olive oil
  • 3 Tablespoons Za'atar Spice Blend
  • 2 cloves garlic
  • tahini sauce
  • handful cherry tomatoes
  • 2 Persian cucumbers
  • 1/4 red onion
  • 2 oz. feta cheese
  • 4 pita breads


  • Preheat oven to 400 degrees F. Cut eggplant into 1-inch slices, cut on the diagonal. Place on a baking sheet.
  • In a mortar and pestle (or in a small bowl with the back of a spoon), mash together olive oil, za'atar, and garlic clove to make a paste. Rub on eggplant slices. Place in oven and cook for 20 minutes.
  • Meanwhile, make tahini sauce, and get your other ingredients ready. Cut cherry tomatoes in half, thinly slice cucumber and red onion, crumble feta cheese, and cut pita breads in half.
  • To assemble wraps, lay cooked eggplant slices inside pita bread. Top with other ingredients and drizzle with tahini sauce. Enjoy!
