Ground Turkey Soup Recipe with Egg Noodles

Herbes de Méditerranée
14.5 oz. can
fresh baby spinach
Dice onion and mince garlic.
In a large soup pot, heat olive oil over medium heat. Add diced onion, garlic, Herbs de Méditerranée, and 1/4 teaspoon kosher salt. Cook for 5 minutes, stirring occasionally, until soft.
Add chicken broth to the pot and bring to a light boil.
Using a one teaspoon measuring spoon, drop bite-sized pieces of ground turkey into the broth. Simmer gently for 10 minutes, until mostly cooked.
Add egg noodles and cook 6 minutes or so, until just soft. Add beans, spinach, and juice of 1/2 lemon. Taste and add more salt and freshly ground black pepper if desired.
*This amount of broth makes a thicker soup. If you want more liquid, add another cup of broth.
**Optional. 1/2 cup white rice may also be used as a substitution
