Roasted Butternut Squash with Turkish Baharat Seasoning

Turkish baharat seasoning is an all-purpose spice blend that goes perfectly with roasted veggies. Butternut squash is the star of this recipe, but potatoes, cauliflower, eggplant, and onion would also work.
What is Turkish Baharat Seasoning?
Baharat seasoning is often used with lamb and beef, but also goes well with veggies, lentils and tomato sauces. Baharat, loosely translated, means “spice” in Arabic (the Turkish language has many borrowed words from Arabic). There are many versions of this seasoning throughout the middle east region. This Turkish version adds mint, along with delicious warming spices. I based my version of baharat seasoning on this recipe here, and it is also the featured spice blend of December 2019 for Spice Club members.
Meal Prep
Roasted vegetables are perfect for meal prep at the beginning of the week, as they are easy to reheat, or can be eaten room temperature or cold over salads. If you end up having leftovers at the end of the week, simply puree it up with some sauteed onion, add veggie or chicken broth, and you have a delicious soup!
Healthy Dinner Ideas
Make it fun and serve these roasted butternut squash with a delicious dipping sauce like a tahini sauce. Or try it with brightly flavored marinated carrot salad. It’s also delicious alongside roasted chicken or fish.
Ingredients
- 4 cups butternut squash chunks (potatoes, cauliflower, eggplant, and onion are also great options)
- 1 clove garlic
- 1 Tablespoon tomato paste
- 1 Tablespoon extra virgin olive oil
- 1-2 teaspoons Turkish baharat seasoning
- 1/2 teaspoon fine sea salt
Instructions
- Preheat oven to 425 degrees F.
- Mince garlic clove or grate with a microplane. Put in a small bowl and add tomato paste, olive oil, baharat seasoning, and salt. Put cut vegetables in a large bowl and add seasoning paste. Toss to coat vegetables evenly.
- Cook for 20 minutes, or until soft and slightly golden at the edges.
