Servings: 4 people as a side dish

  • 1/2 yellow onion
  • 1 clove garlic
  • 1 8 oz. package button or cremini mushrooms
  • 4 Tablespoons extra virgin olive oil, divided
  • 1 12 oz. package frozen peas
  • 1/2 teaspoon fine sea salt
  • 1/2-1 teaspoon Thursday's Little Secret spice blend*
  • 1/4 teaspoon freshly ground black pepper

  • Dice onion. Mince garlic. Thinly slice mushrooms.
  • Heat olive oil in a large saute pan over medium high heat. Add sliced mushrooms and cook, stirring occasionally until browning and soft, about 8-10 minutes. Turn down the heat to medium. Add 2 Tablespoons more olive oil, onions, garlic, salt, spice blend, and pepper. Cook 3-4 more minutes, stirring occasionally.
  • Add peas and cook for 8 minutes or until peas are warmed through. Serve with rice, over pasta, or alongside a heartier main dish.

*If you don't have the spice blend on hand, you can add 1/2 teaspoon allspice and 1/4 teaspoon sumac instead.
