Dinner Ideas for Tonight

Happy Monday! Here are some dinner ideas for tonight, and for the rest of the week. Many of the recipes make terrific leftovers for lunch the next day.
It’s Monday…
…and you’re looking for something quick and easy and yummy. You might even have to stop by the store on your way home, so make it easy on yourself! Sheet pan shrimp with peppers and onions (pictured above) is ready in 20 minutes. Pick up some lettuce, and you’ve got salad. Want tacos? Grab some tortillas. Who doesn’t love a one-pan clean up? Oh, and if there’s leftovers, this is one of my absolute favorites for lunch.
Tuesday
Ok, you have to make these maple glazed carrots with smoky walnut gremolata. They sound super fancy, but they are so easy to make! You might only want carrots for dinner, but in case you need something more, how about crispy skin salmon with za-atar spice blend? Oh, and a major bonus? The carrots can be made in advance, (think over the weekend during your meal prep session), and served cold during the week.
Wednesday
Who doesn’t need a greens boost midweek with a delicious salad? Try this Brussels sprouts salad with with apples and goat cheese. It goes really well with cast-iron steak with mustard and smoked paprika.
Thursday
I really like Thursdays, because, well, they’re practically Friday, right? Celebrate a little with these delicious chicken thighs with white beans and capers. Make a pear and fennel salad on the side.
It’s Friday
FriYay! Have a few friends over and make up a couple snacks, such as these delish bruschetta and roasted red pepper and walnut dip. For a Friday night beverage, try sweet green tea spiked with vodka. Make a cup of green tea, sweetened to your liking and cooled. For one drink, combine 2 oz. of vodka with 3/4 oz. fresh lemon juice. Top with sweetened green tea, and enjoy!
