Ingredients

  • 1 pound fingerling potatoes, medium size, washed
  • 2 Tablespoons extra virgin olive oil
  • 3/4 teaspoon sea salt
  • 1/3-1/2 cup fresh herbs, minced (I used Italian parsley, mint, and chives)
  • 2 Tablespoons lemon zest

Instructions

  1. Preheat oven to 450 degrees Fahrenheit.

  2. In a bowl, combine potatoes with olive oil and sea salt. Toss to coat potatoes.

  3. Cook potatoes until fork tender, 20-25 minutes.

  4. Toss with fresh herbs and lemon zest.

  5. Leave at room temperature or refrigerate until ready to eat.
