Before you secretly drop off another paper bag full of zucchini on your unsuspecting neighbor’s front porch, read on for tips and ideas for using this delicious summer
Use zucchini within one or two days of getting them; they can sit on your counter in a cool spot. Otherwise, store them in the refrigerator in a plastic bag or wrapped in a cloth. Keep them in the produce drawer or on the refrigerator shelf. Some produce drawers are very damp, which will cause zucchini to spoil faster. If this is the case with your refrigerator, keep them on a shelf in the fridge instead, or try adjusting the humidity levels in the produce drawer. If you’re drowning in zucchini, consider freezing it, which is another terrific way to hold onto summer’s bounty.
When selecting zucchini, look for a firm, small or medium-sized fruit (8-10 inches). These typically have the sweetest flavor and most tender flesh. Large zucchini can develop a bitter and fibrous texture. Small blemishes on the zucchini aren’t much to worry about, their soft skin can get nicked during picking and transport. Don’t worry about scarring, a discolored hard spot on the zucchini. This won’t affect the final product. If making a recipe like this, look for straight zucchini, as it is easier to make zucchini noodles. There are many varieties of summer squash, including light and dark green, and a golden yellow color. They all have a similar flavor, and can be interchanged in recipes. Other names for zucchini outside of the U.S. are “courgette” or “mallow”.
